I have been gluten intolerant since the early 2000s - it got continually worse until a holistic Dr told me to stop eating wheat. I did and it helped but did not go away. I have since found that I cannot eat ANY whole grains (GMO??) including oatmeal. I started making my own sourdough with Sunrise Mills non-GMO flour (fermented for 48 hours) and have actually been able to eat it without problems. I didn't do well on any of the Gluten Free stuff out there today - all contaminated? or damage to intestines from previous GMO/glyphosate exposure? Bread needs to be prepared properly with non-gmo flour (I can only use all-purpose flour) - by fermenting it for 24-72 hours all of the gluten is broken down and makes the bread easy to digest. So for many "gluten intolerant people" this could help them. If It's GMO's or an actual allergy to wheat, it would be best to avoid it.
