Since I spent an hour making the useless zucchini fritters , I’ll put a couple strips of cooked bacon on them and mak sandwich with sharp cheddar, mayo and jalapeño mustard will do the trick

I have eaten so much zucchini over my lifetime, I'm surprised I haven't turned in to one...lol. our preferred way to eat them was sliced, dipped in egg, then cornmeal and fried. Then tons of zucchini bread.
