Stability of Olive Oil When Heated
Research indicates that extra virgin olive oil (EVOO) is one of the most chemically stable oils when heated. Studies have shown that it remains safe for consumption even after being subjected to high temperatures, such as frying or sautéing. For instance, a study published in 2018 found that EVOO produced the lowest number of harmful by-products compared to other cooking oils when heated.
