The U.S. needs to import 70 to 100 million eggs within the next month or two to fill the gap. Did you know, that US eggs are illegal in the EU because they do not meet safety standards. US eggs are washed in hot water, then sprayed with a sanitizer. In Europe, they don't wash nor sanitize the eggs, thus they don't require refrigeration.

What they are feeding chickens (even small farms) is also affecting health. Corn and soy (store bought feed I assume) is what is in the meat of the chicken fed these grains and they become high in polyunsaturated oils (PUFAs) which stay in the body for a long time vs. saturated fats. Said to be behind most health issues these days (look up Ray Peat and George Dinkov for research). One of my locals who sell eggs decided to make his chickens produce low cholesterol eggs by feeding them a certain feed. We all know Cholesterol is not the problem and is required by the body. So be careful who you buy from and know how the chicken is raised. Check out Nourished Farm coop online - only chickens I know of that are fed no PUFA based grains, etc.

Unwashed eggs can be stored unfrefrigerated for 3 months, the natural bloom prevents them going bad.
Eggs take 3 weeks to hatch, and hens will lay beside a broody so she can incubate the eggs.
Washed eggs do not last as long.
We wash our eggs just before we use them.
This is just another fear porn from the FSA to control the food supply.

Go without, best way to be safe.
I had an allergy to eggs, they caused 'hives'. When I kept natural fed chickens I had no allergy. Layers pellets must be the problem.
I decided long ago that I didn't lke where they came from, & given high rates of salmonella, I refuse to eat anything with eggs.
Manufacturers of cakes etc use 'blind' eggs which hadn't hatched, by then they're a disgusting slop, could be the odd dead chick liquidised in with them.

My father took us for flu vax's when I was quite young, twice I recall I broke out with pussy infected hives just after I started primary school. They used eggs to grow the culture on, part of the reason for my allergy.

I make wonderful pancakes using strong plain flour, mix of soya milk & water & a banana! 8oz flour, 300 mil or more liquid, 1 banana sliced, liquidized. Top with demerara sugar & lemon juice.

Thanks for sharing! I don't have an egg allergy, but my brother doesn't eat eggs either for health reasons. So I'm happy about any egg-free recipe we can try :)
