The earth is massive especially placing on a flat plane. Visually we really can't see that far so objects disappear from view even though they are still in there. With the help of a high powered lens we can still see them in clear weather.
The sun moving from horizon to horizon would appear to be a relatively straight line, in our limited view of the earth's plane.
